Trader Joe’s Low-Carb Dinner Hacks
Basic B Ground Beef Chili:

1 package cauli rice
-
1 big can diced tomatoes

1 package ground beef
-
1 container mirepoix
Directions:

Stir-fry beef and mirepoix in separate pans (with an oil spray) for 7-8 minutes.

Combine all but cauli rice & let simmer with taco seasoning for 10+ minutes.

Stir-fry cauli rice separately.

Top with Parmesan, cilantro, & jalapeño.
Sausage & Spinach Chili

1/2 onion
-
1 bag frozen spinach
-
4 apple chicken sausages
-
2 small cans diced tomatoes
Instructions:

Dice onion.
-
Stir-fry in a pot with 1 Tbsp of oil for 6 minutes.

Add spinach to pot until cooked through. Separately, stir-fry sliced sausages in a pan. Add tomatoes and sausage to pot. Simmer with taco seasoning for 10+ minutes.
